Highlight of this day was dinner which featured Rain City Soups and veggie skewers made up of fresh produce from the Main St. Farmer's Market and Organic Acres Market

I was always curious about Rain City Soups whenever I paid a trip to the market and on my last visit I just couldn't resist the Butternut Squash and Fennel pack. These packs are perfect for days you don't want to spend all evening in the kitchen. It was a Monday, so that was reason enough. This soup is seriously delicious and really made me realize how I've underestimated the versatility of the butternut squash all these years.

As a side I made veggie skewers inspired by a recipe from one of my favourite food blogs, Love and Lemons. Bonus, this meal was also part of Meatless Mondays! It's pretty self-explanatory. You don't eat meat. On Mondays. Definitely take a look at some of the stats behind it and what an impact making that choice once a week can have for yourself and the environment.
