A couple of openings of note, including one re-brand switcheroo: Bao Down has finally opened up their UBC location, while their first Vancouver location has now been re-born as Edwards Seafood & Spirits.
The UBC U-Boulevard location of Bao Down has been a long time coming--we first learned what businesses would serve the Central development in November 2016.

Restaurants and retailers there have been rolling out the openings over the last few months, though Bao Down have been prepping to open as far back as October of 2017. Owners Greg Edwards and Matt Adolfo told The Ubyssey this spring the delays were due to investor and permit issues.
Featuring their signature bao bun sandwiches and loaded fries, UBC's Bao Down opened their doors officially on Tuesday, July 3.
Meanwhile, it's been a busy time for these guys. Their original Gastown location has been undergoing a metamorphosis in the past few months, following the shutter of Bao Down there at the start of this year.
Now the doors are open at 12 Powell Street for Edwards Seafood & Spirits--named for co-owner and chef Edwards. The former Chewies chef and his team at his eponymous seafood joint are behind a menu of dishes like fish & chips, fried fish sandwiches, fresh seafood plates, and cocktails.

They kind of snuck this one by with just a few teases on their Instagram account of staff and renovations in the past few weeks, finally showing us some food as the Canada Day long weekend wound down Monday.
It's been a few years of shifts for the Bao Down crew, as they have opened and shut multiple locations in Vancouver (Commercial Drive, the Snack Bar in Gastown) and San Francisco. They also continue to operate their popular Bao Down Gastropub concept in Olympic Village.
Bao Down UBC is located at 6065 University Boulevard at the University of British Columbia; Edwards Seafood & Spirits is located at 12 Powell Street in Vancouver.
