During Dine Out, hundreds of restaurants in Vancouver offer special menus and deals for eager diners throughout Metro Vancouver. It’s an all-out celebration that brings together every member of the city’s culinary scene, as well as a standout chefs from around the world.

The Vancouver World Chef Exchange will bring 5 chefs from around the world to cook a series of delicious collaborations with our own city’s top talent. With chefs visiting from London, Sydney, Montreal and beyond, hungry diners will be treated to once-in-a-lifetime meals prepared by burgeoning Vancouver talent and international all-stars.

Here’s a breakdown of who and what to expect at each meal. Happy dining!

January 22: Heritage Asian Eatery

Heritage Asian Eatery Executive Chef and Owner Felix Zhou will reunite with friend and former chef mentor Warren Geraghty of Rhubarb Hospitality Group (UK) for an internationally inspired multi-course tasting menu that showcases their respective global experiences. The two accomplished culinary stars first met working on the line at Vancouver’s acclaimed West Restaurant and later teamed up again across the pond at Michelin-starred restaurant Galvin La Chapelle in London.

January 23: YEW seafood + bar

Though they live and cook oceans apart, Executive Chef Edgar Kano and Head Chef Francesco Mannelli share a passion for seafood and fishing, and a desire to create memorable dishes that stay true to their roots. This culinary collaboration will see local ingredients transformed by Chef Francesco’s Mediterranean influence, combined with a kick of Chef Kano’s Latin inspiration.

January 24: Coquille

Coquille Restaurant Chef de Cuisine, Chris Janowski and his team welcome Chef Jason McLeod of Ironside Fish & Oyster in San Diego to Vancouver for a multi-course, wine paired menu that offers a taste of what the Pacific Ocean offers us from British Columbia to Southern California. Chef McLeod, who is originally from British Columbia, earned 2 Michelin stars at Ria in Chicago before moving to San Diego to open Ironside Fish & Oyster.

January 30: Bauhaus

Bauhaus executive chef team Tim Schulte and David Mueller welcome Michelin Star Chef Sascha Stemberg from Haus Stemberg in Germany to Vancouver. The philosophy of contemporary German cuisine is to utilize only the best ingredients while celebrating them at the core of your dish delicately balancing each flavour on your plate. Carrying on in this tradition, the chefs will present a five-course menu featuring the finest Canadian ingredients, Asian flavors, and traditional European cooking techniques. Bauhaus Restaurants wine director Kevin Curley has worked closely with the chef team to create a British Columbia and German wine pairing.

January 31: St. Lawrence

Guests can expect "a night in Old Montreal" as St. Lawrence Restaurant’s Chef JC Poirier and Jérémie Bastien of Montreal's Monarque Restaurant combine their skills and experience to reflect cuisine routed in the Quebecois and Old French culture. Bastien's Monarque is considered one of the most elegant and exquisite restaurants in Montreal and this five-course dinner with a French wine pairing is sure to tantalize taste buds, helping bring a taste of Quebec coast over to the West Coast. 

If you can’t wait for these special events, be sure to check out Dine Out Vancouver Festival Grand Tasting, taking place January 17, 2019 in Rocky Mountaineer Station. This year’s Grand tasting serves as the festival’s gala pre-opening event, featuring a delicious array of restaurant tasting tables, craft breweries/cideries, and over 20 British Columbia wineries.
