Notch8 in the Fairmont Hotel Vancouver has created a special high tea menu in celebration of Canada 150.

It’s a journey Notch8 is offering by way of a special Canada 150 high tea served in its private dining room, which until Sept. 3, has been transformed into an homage to this great country complete with vintage travel posters and photographs and nods to grand railway hotels and train travel.

The fact Notch8 is located inside the iconic Fairmont Hotel Vancouver with its green copper roofs, chateau-style architecture, grand ballrooms and storied pasts, adds to that sense of Canadiana. The Canada 150 Tea begins with individual pots of tea of your choice, including everything from Fairmont earl grey to maple maple, all of which pair perfectly with a menu designed to take your taste buds on a cross-country tour. A children’s tea is also available, which includes kid-friendly tea sandwiches, scones, cookie and other delicious sweets.

Just some of the dishes, inspired by Fairmont hotels across Canada and included in the $59 high tea, include:

Mini West Coast club with Dungeness crab, smoked salmon, side stripe prawns, smoked oyster, albacore tuna: Fairmont Hotel Vancouver.

Stampede corn dog with Wagyu beef: Fairmont Palliser, Calgary, AB.

Lobster Roll with butter, chives, celery and sumac aioli: The Algonquin, St. Andrews, NB.

Butter Tart with caramelized pecans: Fairmont Le Chateau Montebello, Montebello, QC.

The Fairmont Pacific Rim has created a couple of Canadian-inspired cocktails just in time for Canada Day July 1.

 

Meanwhile, the Lobby Lounge at the Fairmont Pacific Rim has created two new cocktails in honour of Canada 150. With a nod to Canada’s favourite band, the Tragically Hip, the Fairmont has created the “Ahead By a Century” ($15) cocktail made up of Long Table Gin, Lillet Blanc, lemon, lavender, maraschino and chocolate bitters, and their version of the French 75 inspired by the Canada150 ($150) cocktail made with Remy Martin XO, Okanagan Spirits Pear Eau-de-Vie, lemon, honey and Dom Perignon.

 

TWG Tea Salon is also celebrating Canada’s Confederation with a limited edition tea.

Made up of red tea from South Africa, the Jubilee Tea blend yields notes of maple syrup and a tart aftertaste of cranberry. Packaged in a limited edition red caviar tin and gift box, Jubilee Tea was created to be evocative of Canada’s history and harmony.
