Chocolate should be eaten every day. Just ask chef Thierry Busset, owner of Thierry Chocolaterie, Patisserie, Café and perhaps one of North Americas finest pastry chefs. Vancouver is lucky to have him settled in our fair city, far from his hometown in France, snuggled into his classy and cozy cafe on Alberni Street, celebrating his love of chocolate everyday next week.

Starting on Monday, Oct. 22 until Oct. 28, Busset is excited to present Chocolate Week. Each day he will be releasing a new and exciting chocolate treat. It begins on Monday with a new product launch of real Tahitian vanilla chocolate a decadent white chocolate and Tahitian vanilla ganache enrobed in 70 per cent chocolate, bitter enough to balance the creamy filling.

You wouldnt want to eat too many of these just two or three and stop, advises Busset. Then the next day, have two or three more. And the next day....

Its hard to argue with an expert. He compares chocolate to tea, coffee or wine, where the region it comes from and the farmer who grew it contribute so much to the subtleties of flavour of each type of chocolate.

I like chocolate early in the morning with coffee, when my palette is very clean, he says. Or in the afternoon for a little lift. Actually, I like chocolate anytime.

Chocolate and Bubbles, an evening event on Tuesday, is an opportunity to get to know the chef. Hell be offering the entire weeks special chocolate creations to guests with his favourite pairing of bubbles and red wine. Beware, his French charm could be contagious. I believe men should buy chocolate and flowers for their women everyday. They shouldnt wait until Valentines Day, he laughs. I think my wife would agree.

The rest of the week the celebration of chocolate continues with 80 per cent chocolate specialties, dipped macaroons, liquid chocolate and seasonal treats. If youre still concerned about indulging, Chocolate Week will be donating a percentage of the chocolate sales for the week to St. Pauls Hospital.
