Killjoy Barbers offers you a drink with that hot shave

Youre a guy whos about to get married and want to look your best. You also want to have some fun with your friends beforehand.

How does this scenario work for you? The day before the wedding, you and your friends those who grow facial hair at least converge at Killjoy Barbers in Yaletown for a hot shave. When youre waiting for your turn, you walk from the barbershop fronting Hamilton Street into the adjoining Killjoy bar to get a drink. You bring it back to the barbershop and join your friends in a conversation about well, the rest of us dont need to know.

The barbershop half of Killjoy Barbers opened just over a month ago as part of the Donnelly Groups mission to give each of its 16 establishments a different vibe. It recently hired former Bartender of the Year Jay Jones to continue that effort behind the bar. As executive bartender, Jones is working with bar and beverage director Trevor Kallies to come up with cocktails and drinks that appeal to each bars clientele.

Killjoys executive chef Alvin Pillay is doing the same in the kitchen. The menu is primarily charcuterie and cheese, sourcing his meats from Oyama, The Cures Robert Belcham and Campagnolos. Hes also doing some old-style preserving to have just the right accompaniment.

Asked to suggest a food and drink pairing, Pillay pauses and then says, Id have a Bourbon Old-fashioned with a couple of slices of Avonlea cheddar and some Ramp Mustard. Theyd be a nice little combination.
