First-time restaurateurs Ben Thornhill and Stefan Holm are opening a new specialty sandwich shop called Hubbub at 859 Hornby. The star of their menu will be a slow-roasted pork shoulder with cilantro, pickled jalapeños and caramelized onions.

First-time restaurateurs Ben Thornhill and Stefan Holm are opening a new specialty sandwich shop called Hubbub at 859 Hornby. The star of their menu will be a slow-roasted pork shoulder with cilantro, pickled jalapeños and caramelized onions. All of the meats are going to be prepared and/or roasted in-house, except for the organic turkey sausage, which is sourced from a butcher on Granville Island. Their as-yet-unofficial motto: “We make everything we can, and if we don’t make it, we know the guy who does.” Opening day is slated for the middle of March.
 
Chef Robert Clark of “C” Restaurant took home the bronze medal at this past weekend’s Canadian Culinary Championships. The grueling competition saw the best of Canada’s culinary talents face off in three battles: preparing a dish to pair with a mystery wine; a timed Black Box; and a pull-out-all-the-stops grand finale where they were permitted to wow at will. According to WE’s own Andrew Morrison, who was tasked with refereeing and judging the competitions, it was “closer than we’ve seen in past years. The scores across the board were very tight. Robert and his team acquitted themselves admirably. It was a very tough field this year, and they have plenty to be proud of.” The silver medal went to Jeremy Charles of Raymond’s in St. John’s and gold was awarded to Martin Juneau of Montreal’s popular Le Newtown.
