As part of the Distinguished Restaurants of North America (DiRONA) conference at the Wall Centre recently, David Hawksworth spoke as part of a panel tackling The Future of Fine Dining.

Until recently, the term fine dining connoted a bit of stuffiness: you always felt you had to be on your best behaviour if you were to be allowed back. But places like Hawksworth Restaurant are redefining just what it means to have a taste of the best.

No one wants to open a fine dining restaurant any more, he said. We try to have it more relaxed but if you want a 88 Lafite or $9 glass of Shiraz, you can.

But chefs also know they have a more knowledgeable, well-travelled diner seated at their table. You cant get away with anything because someone will know.

And that someone, it appears, is our readers. They know what it takes to create Vancouvers best restaurant and they believe that Hawksworth is it.

As well as garnering gold as the best restaurant, the West Georgia hotspot was chosen for Best Fine Dining, Best Chef, Best Hotel Dining, Best Private Dining Room, Best Downtown, Best Interior Decor, Best Wine List and Best Service.

A fine collection of accolades, indeed.
