Watch: Vancouver's most decadent brunch is back, and it's better than ever

A build-your-own Caesar bar, a sweet treat spread, and beautiful seafood, steak, and brunch dishes

"To the Victor Go the Spoils" is the motto of The Victor, the posh, sprawling high-end restaurant at the Parq Vancouver, and on Sunday mornings this is particularly true. That's because The Victor has resumed offering its decadent brunch service, and they've even managed to step it up to make the leisurely weekend meal an even more enjoyable experience.

The Victor first launched brunch back in 2019, but the pandemic forced its lengthy pause. The restaurant recently kicked off the offering once again and they've made a few incredible additions, including new dishes on the menu and a few other sweet surprises.

In fact, the sweetest thing about brunch at The Victor is apparent before you even check in - they've got a tempting spread of candy, macarons, and chocolates set out by the front door, so you can get an instant sugar rush on your way in (and another one on your way out for good measure). 

What's on the food and drink menu for brunch at The Victor?

The brunch menu has echoes of The Victor's regular dinner menu, in that you can divide your attention - and appetite - between the restaurant's raw bar selections, including seafood towers, sashimi, aburi sushi and rolls, or freshly-shucked oysters, as well as heartier breakfast plates, steak-centric dishes from the broiler, and fun sides (like their signature mac and cheese waffle). 

When it comes to brunch mains, The Victor runs the gamut from sweet new options like Caramelized Bananas Foster French Toast to the more simple bacon-eggs-toast "Victor Victoria." Their sole Benny is the "Oscar" which features poached eggs atop some of the best crab cakes in town with a perfectly crunchy exterior packed to the gills with fresh crab - no filler in sight. 

If steak-and-eggs is your scene - or at least beef for breakfast - the Steak & Eggs Diane features a juicy, robust eight-ounce eye of ribeye “Delmonico” steak with a Dijon peppercorn sauce, topped with a fried egg and served with thick, crunchy onion rings and crispy fried potatoes. A return visit for me is in order to get my hands on their Wagyu brunch burger, which features a fried egg, thick cut bacon, tomato jam, caramelized onions, Taleggio cheese, and black truffle dressing. 

Sunday brunch gets an extra kick at The Victor with a couple of novel drink options: A mimosa cart that is dispatched tableside, or their impressive build-your-own Bloody Mary/Caesar bar, featuring your choice of spirit, tomato or clamato juice, hot sauces, rim seasonings, and garnishes like pickles, cucumber sushi, pepperoni sticks, spicy beans, and bacon. 

Kick back and linger over your brunch and enjoy live music and the elegant surroundings; it's a nice place for a leisurely - and decadent - Sunday brunch.

Brunch is served Sundays from 10 a.m. to 2:30 p.m. The Victor is located at Parq Vancouver at 39 Smithe St in Vancouver.
