A 'mad restaurant experience' in East Vancouver is 'nearing completion'

Expect a "whimsical, playful setting designed to feel like stepping down the rabbit hole."

For more than a year, signs have been up in East Vancouver for a new "mad restaurant experience."

They appeared just after the building, dubbed Yarrow East Village, was finished at 3602 E Hastings St. and promised a "bistro by day, lounge by night" with Alice's Adventures in Wonderland-themed images.

"Some say to survive it you need to be as mad as a hatter," reads on of the posters covering the windows.

Well, after a long wait, it appears the Mad Hatter Bistro is almost ready to serve its first tea party (of sorts), as job listings have recently been posted for kitchen staff.

Sebastien Jutras, a partner in the project and managing director at Sal y Limon, tells V.I.A. in an email that the Mad Hatter Bistro is "nearing completion after an excessively long and unexpected journey."

He notes the bistro is a partnership between himself, Alexandria Allen, and Sal y Limón (which happens to be moving into the neighbouring space).

The new bistro will offer customers two different experiences, depending on when they stop by.

"By day, guests can enjoy breakfast, brunch, gourmet sandwiches, and specialty coffees," Jutras writes. "By night, the atmosphere transforms into a lounge experience with a creative dinner menu and crafted cocktails — all within a whimsical, playful setting designed to feel like stepping down the rabbit hole."
