Watch: Trying a new Vancouver spot for Japanese curry made with wagyu

This brand new spot is already super popular with Japanese curry fans

Ever had Japanese curry made with wagyu beef? 

Wa! Curry is the new concept from Aburi (Miku, Minami, Aburi Market). They’ve flipped what used to be Gyoza Bar downtown into a dine-in and take-out curry spot making silky, savoury long-cooked curries using the wagyu they import for their market and restaurants.

The menu is simple - they do wagyu curry bowls, wagyu stew bowls, and vegan keema stew bowls with rice as base options, then you can do add-ons, like golden-fried pork katsu or prawns, crispy Brussels sprouts, or soft-boiled egg. 

If you have the chance, get your hands on their beautiful beef curry bun, made by the Japanese baker who has joined Aburi to launch their other forthcoming new concept, Wa! Bagel, featuring Japanese-style bagels

A rep for Aburi explained the idea for Wa! Curry stemmed from the restaurant group wanting a way to minimize waste; customers shopping at West Van's bustling Aburi Market tend to request only certain cuts of wagyu, but the company orders whole animal portions to butcher themselves. Rather than let the cuts go to waste, their talented chefs are deploying them into the curry, which simmers for a long time until you're left with a deeply flavourful, soft, shimmering curry sauce with incredibly tender bits of meat that contrasts beautifully with the fluffy rice and crunchy deep-fried proteins. 

Wa! Curry gets super busy at lunchtime, but you can do takeout or even pre-order your meal to dine in. 

Located at 622 W Pender St, Wa! Curry is currently only open for service on weekdays from  11:30 a.m. to 5 p.m., though plans are underway to add Saturday hours soon.
