Beest opened up on Bute Street on Vancouver's "Ramen Row," serving its signature roast beef-topped soup-less mazeman noodles in a contemporary restaurant space

For a new noodle shop to stand out along Vancouver's "Ramen Row," they've got to bring something fresh to the game.

Beest, which opened its doors to customers in early June, is doing its part to offer something different with its ramen.

The modern restaurant, located at 770 Bute St, has a sleek, contemporary interior with a glass-walled kitchen in which the ramen chefs assemble Beest's signature soup-less ramen that has an emphasis on beef. This is a "mazeman" style of ramen, which has grown increasingly popular in recent years.

In fact, every bowl (minus the vegetarian "Impossible" option) comes with sliced roast beef atop ramen noodles tossed thoroughly in your choice of sauce. The most popular option is Beest's Shoyu, which is made with beef stock, seafood stock, soya, and beef tallow with sesame oil and green onion. Other "flavour" offerings on the menu include the "Smokey Miso," which is Beest's sole spicy ramen, or a creamy bowl with added milk and parmesan cheese.

Customers choose their portion of noodles and roast beef with their dish, and add-ons (for an additional charge) include soft boiled eggs, kimchi, or extra green onion. At the table are garlic chips you can add to your bowl.

There is soup at Beest that comes with your ramen order, but it's not meant for drinking before the meal or for pouring on top of your noodles; instead, it's a rich beef broth that is designed to be sipped in between bites of saucy noodles. (The beef soup does not come with the "Impossible" meatless ramen dish.)

Beest also swirls up vanilla soft serve in cones for dessert, if you happened to have any room left.

The restaurant is keen to sign guests up for their loyalty program, which gets you a free ice cream with your meal and a free extra portion of noodles.

Beest's "Ramen Row" location was most recently home to an outpost of Korean restaurant Damso. The new ramen restaurant is currently in its soft open phase, and is open for business daily from 11:30 a.m. to 11:30 p.m., with last orders taken at 10:30 p.m. Seats are first-come, first-served.
