Watch: Find dishes from some of Vancouver's top chefs at this posh summer patio pop-up

The decked-out outdoor dining spot is out-doing itself this summer

In a city where real estate drives so many decisions, having a summertime patio pop-up in a very eye-catching space is clutch for drawing in diners. But this year, the decked-out outdoor space in front of the Fairmont Pacific Rim is out-doing itself by bringing on board some of Vancouver's top culinary talent for a six-week run of very special dishes.

Starting June 1, the Pac Rim Patio will kick off its unique collaboration series showcasing Michelin Guide-recognized chefs and restaurants, including those located on the acclaimed hotel property. 

The roped-off zone is set up with astroturf, picnic tables, a food truck kitchen, and bar, and while the vibe might scream picnic, the food is top tier. 

The Pac Rim Patio will feature a dish each by Gus Stieffenhofer-Brandson (Published on Main), Lý Nguyen and Vincent Nguyen (Anh & Chi), Andrea Carlson (Burdock & Co), Lee Cooper (L’Abattoir) and on-property's Michael Zafirian (Bacaro) and Hector Laguna (Botanist). Featuring a different spotlight chef and dish each week, the special item will be available for just four days. 

For every feature chef dish sold, a portion of the proceeds will be donated to the BC Hospitality Foundation

  • June 1-4: Chef Gus Stieffenhofer-Brandson (Published on Main)
  • June 15-18: Chef Andrea Carlson (Burdock & Co)
  • June 29-July 2: Chefs Lý Nguyen and Vincent Nguyen (Anh & Chi)
  • July 13-16: Chef Hector Laguna (Botanist)
  • Aug. 10-13: Chef Lee Cooper (L'Abattoir)
  • Aug. 24-27: Chef Michael Zafirian (Bacaro)

Along with the weekly rotation of guest chef dishes, Executive Chef Damon Campbell’s food truck is serving a fresh summer menu perfect for outdoor dining. To accompany Campbell’s dishes, Creative Beverage Director Grant Sceney has assembled a selection of refreshing Malfy Gin cocktails including G&T’s, Spritzes, and other summertime sippers, alongside an extensive selection of craft beers, local and international wines. Diners can enjoy live music on-site on select evenings. Seating is first-come, first-served, and the patio is open if weather permits.

The official summer schedule will kick off on Thursday, June 1, and will run through Sunday, August 27. The Pac Rim Patio is open Wednesday to Sunday.
