We've talked about these darlings before: From the side dishes section on the menu at The Victor at the Parq Hotel, you can choose their Mac & Cheese Waffles, which are served with a decadent cheese fondue for dipping. Whoa, baby!

Waffle-topped milkshakes at Off the Grid

Where better to work waffles into the mix than a milkshake, right? Off the Grid on Kingsway is known for the crazy magic they work with over the top creamy shakes decked out in all sorts of toppings and garnishes, including their housemade waffles.

Eggs Benny Waffles at Just Waffles

Waffles make a wonderful vehicle for the brunch staple of Eggs Benedict. The Eggs Benny at Just Waffles not only sports those poached eggs and Hollandaise, but you can get it with crocodile sausage. Yes, you read that right.

Now here's a two-fer for you. First, let's make it clear that not all waffle cones are for ice cream. Case in point, Beljam's Waffle truck, on the festival circuit for a couple of years, and spotted recently in an episode of Riverdale, Beljam has a loyal following for their "Waffle Cone" creations. Their waffles serve as a vessel for things like scrambled eggs and bacon, pulled pork, or fried chicken. And, secondly, they make a Waffle Poutine, starring waffle strips topped with cheese curds and gravy.

Savoury Brussels Waffles at Nero Belgian Waffle Bar

Nero's two Vancouver locations are definitely sweet spots when it comes to waffle awesomeness, but they also take things down a beautifully savoury path. The waffle shop offers a variety of savoury dishes using their fluffy, crispy Brussels-style waffles as a base, including ones like the Rocket (Havarti, arugula, grape tomatoes, soft boiled egg, grain mustard) or the Smoked Salmon (with dill mascarpone and red onion).

Major points for creativity here: Dixie’s BBQ’s brunch features a massive tower of breakfast big-ness with their take on an AM sandwich. And check out those nice buns; the Breakfast Club Burger stars a 4-ounce ground chuck and brisket patty, a fried egg, bacon, and American cheese all layered on waffles-as-buns, plus tater tots on the side. File this one also under waffles used instead of buns or bread: Frites' waffle sandwiches. The fries shop (with benefits!) has a couple of waffle sandwiches on the menu, like the Chicken Waffle (featuring fried chicken) and the BLT. See how they stack up (and save room for fries).

Cacao 70 is the Montreal-based waffle and chocolate shop that's taking over Canada, but you can also enjoy some inventive non-dessert style waffles at their Eatery concept in Vancouver on Denman. Look for a dish called the Savoury Waffle. It's a classic waffle topped with smoked ham, two sunny side up eggs, roasted mushrooms, roasted red onions, green onions, mild white cheddar cheese, bechamel and syrup--for a little sweet and salty.
