Vancouver coffee chain moving into downtown location left by defunct bakery

Vancouver's Pallet Coffee Roasters is adding another link to its chain.

The 10-year-old cafe business has recently revealed it is opening a new location. 

Pallet is moving into 1115 Melville St. in the city's core. Up until last year that had been home to one of Sciué's locations before all four of the Italian bakery cafes shut down almost exactly a year ago.

The new Pallet coffee shop will open on May 1, 2024.

"Located in the bustling district of Downtown Vancouver and just steps away from the Burrard SkyTrain station, Pallet Melville boasts a refined design and spacious setting," states the company in a press release.

The menu will include sandwiches made in-house, pastries, and specialty coffees, like the other Pallet locations. The new location will also add something new to the chain: a grab-and-go-fridge.

"Our goal for this location is to be a community hub where people can meet, learn, and enjoy a great cup of coffee and delicious food," says Pallet's Deeba Sharifi in the release.

It marks the seventh cafe for Pallet (including its Railtown roastery and headquarters) and the eighth spot overall when including their Palate Kitchen location on West Hastings.
