Neapolitan pizza from a custom-made wood-fired grill will be the specialty of Pizza Rubato, a new pizzeria opening at 561 W Broadway in Vancouver.

The evolving retail landscape on West Broadway near Cambie is getting a fresh face in the pizza game: Pizza Rubato is firing up their custom-made oven in a space that had previously been an outpost of the salad chain Freshii.

Located at 561 West Broadway, Pizza Rubato has been in the works for some time now, though their permanent sign was just hung at the end of 2021. 

Pizza Rubato is setting up shop in a busy corridor that's been the site of ongoing construction for the Broadway Subway project in an area that's seen lots of changes in recent history when it comes to restaurants and other businesses coming and going. 

Not too many details are public at the moment about Pizza Rubato, but the pizzeria emphasizes its dedication to "ingredients, time, and temperature" when it comes to making pizzas. To that end, Pizza Rubato commissioned its wood-fired oven from the globally-renown Mugnaini to install here in Vancouver.
