Imagine the anticipation of pressing your knife into a plump poached egg in the hopes the inside is golden-orange oozy perfection - but stretch that feeling out over several long months.
That's kind of what it's been like wondering when all-day breakfast spot Yolks, one of Vancouver's biggest food truck-to-restaurant success stories, would be able to welcome guests to its third location.
Sitting just shy of the West End border at 988 Davie St, the third Yolks restaurant will officially be dishing up breakfast and lunch starting Monday, November 27.
Initially, Yolks had been aiming to be open for business this spring, but extensive behind-the-scenes delays held the restaurant up, though it did give them a chance to nail down the right interior design. The result is a bright, cheery, modern diner-style space with retro-vibed painted stripes on the wall and an impressive mural that chronicles Yolks' journey from four wheels to three restaurants.
The business, which launched at the height of the food cart craze in 2012, went bricks-and-mortar for the first time at the very end of 2013.
That first location on Hastings has since shifted down the street a bit and Yolks also operates a busy outpost on Broadway at Cambie. On the heels of getting Davie up and running, chef/owner Steven Ewing told V.I.A. those two predecessor outposts will undergo some renovations to align with the newest Yolks, this winter and spring, respectively.
What's on the menu at Yolks on Davie
Yolks has been perfecting its signature line-up of breakfast platters, including epic stacked sandwiches (among them an incredible brunch burger) and Bennies, since day one. They have always had the same core line-up of dishes, but those dishes have gone through several tweaks and adjustments over the last decade.
Now their savoury breakfasts include mix-and-match combo platters, as well as plenty of egg-centric dishes, featuring locally-sourced eggs from Coligny Creek. Don't forget their signature Truffle-Lemon Potatoes on the side; You can take them up a notch with a squeeze of their housemade ketchup, which is sweet and spicy, kind of like ketchup potato chip flavouring with a bit of a tangy-hot kick.
Another dish with a bit of heat is the fried chicken and waffles, which comes with Yolks' perfectly poached eggs and a spiced syrup as well as a "schmear" of cream cheese with spiced walnuts and maple.
The restaurant also offers some sweet dishes and seasonal twists; for example, their French Toast is crunchy and golden, decked out for late fall with a pool of cinnamon apple compote and a scoop of vanilla ice cream.
Anyone with a sweet tooth will also want to check out Yolks' beignets, which come with your choice of sauce for dipping (or dripping), and their creamy milkshakes.
The Yolks menu has also grown substantially over the years, stretching to now feature more lunch and brunch options, like burgers, salads, granola parfaits, and more.
Much like with their interior, Yolks on Davie is leading the charge as far as the menu goes. Diners can expect to find the same dishes in the coming weeks at all three of the Yolks locations.
