There are so many ways to bake a cookie. From fresh topping choices to new takes on classic favourites, Vancouver’s bakeries and cafes are serving up a concoction of unusual but undeniably delicious cookies.

Handcrafted in Vancouver, Moki infuses classic Asian dessert flavours into subtly sweet, creamy, and squishy mochi cookies. 

A take on the traditional Japanese rice cakes, their mochi fillings include Taiwanese Milk Tea, Japanese Matcha, Filipino Ube, and black sesame seeds.

The Diablo Cookie from West Coast-inspired taco joint Tacofino is one devilishly delicious dessert. 

Full of rich chocolate flavour, it’s the added ginger and cayenne that gives this sugary sweet cookie a kick of chili spiciness.

Formed by brother and sister baking duo Andy and Jessica Nguyen of Vancouver, BAK’D serves up a selection of unique combinations as well as their creative take on classic cookies. 

One of their most popular creations, The Earl Grey Honey cookie, infuses Twinning’s Earl Grey into the cookie dough with white chocolate chips. A drizzle of honey vanilla glaze is added on top for the perfect finishing touch.
