You can dine in terrariums at this otherworldly restaurant pop-up in Vancouver

Sure, we’ve all been fortunate enough to enjoy a dinner with a view (hey, this is Vancouver after all), but this event offers diners something entirely different.

Dinner With a View is a luxury dining pop-up known for serving unexpected meals in unexpected places. This year’s event, which runs until February 16th, will feature life-size, outdoor terrariums set up on scenic Ambleside Beach in West Vancouver.  Each inspired by different regions of the earth, the terrariums will reflect the tundra, tropical, grasslands, arid and boreal forest landscapes. These extraordinary spaces are designed using luxurious textiles and elegant lights, providing the ultimate setting for a once-in-a-lifetime meal prepared by an award-winning celebrity chef.

Chef Paul Moran has honed his talent at some of the world’s top restaurants and hotels. In 2019, Chef Moran competed on Food Network Canada’s show, Top Chef Canada where he took home the title of Canada’s Top Chef. Moran is currently Executive Chef at 1909 Kitchen and at the Tofino Resort + Marina, where he masterfully creates dishes with ingredients sourced and foraged from Tofino’s oceans, shoreline, and forests.

At Dinner With a View, guests will step inside their respective terrarium in order to enjoy the blind three-course menu, which has been designed by Moran exclusively for this event. Punctuated with products that are local and in season, the menu will feature foraged and wild foods that were literally handpicked by friends and family of the Chef or produced by farmers and artisans in the Fraser Valley. 



“After living and working abroad in France, Dubai, Montreal, Mexico, and all over beautiful B.C. I’ve accumulated a plethora of favourite recipes”, says Morgan. “BC Line-caught wild fish, pure maple syrup and fermented sourdoughs will all be featured in dishes… this menu oozes and speaks specifically to Vancouver and Canadian cuisine.”
