New commissary kitchen, food community space coming to Mount Pleasant

A new restaurant is in the works as well

Renée Chan is plotting something for Vancouver.

The chef and dietitian is behind The Skript Kitchen, a new space dedicated to food businesses. The 3,500 square foot space at 250 W 3rd Ave in Mount Pleasant will feature a gluten-free commissary kitchen for food entrepreneurs and catering companies.

"There is increasing demand for production spaces where small food businesses can grow and thrive," describes a press release. "The Skript Kitchen is designed to meet this need."

The Skript is in a new building with a fully equipped kitchen aimed at businesses looking to scale up their operations. Applications for space have opened, though the business model does not include "ghost kitchen" operations.

"Having worked inside a commissary kitchen for many years, I was able to build The Skript Kitchen from scratch to the specs I would want as a food entrepreneur," says Chan in the release.

Chan ran True Nosh for over a decade prior, offering healthy cooking classes, but rebranded as The Skript in 2024, explaining that the "k" in Skript is a nod to the "kitchen" component. 

In January, the provincial government noted that the food and beverage is the second largest manufacturing sector in B.C. by sales, and that local food and beverage manufacturers are expected to export $5 billion in products to 150 international markets in 2025.

“The Skript Kitchen will provide a space for our talented culinary businesses to grow in this province and beyond,” says Chan.

Beyond being a gluten-free commissary kitchen, Chan wants to build a community around The Skript, including classes and events. A hot sauce festival is already being organized. On top of that, a restaurant space is planned as well.
